Crust
- 1 packet Moir’s Munch-a-Lot biscuits, crushed
- 30ml butter or margarine, melted
- 20cm Hulamin pie dish
Mix the above and use to line the pie dish to form the crust.
Filling
- 3 extra-large eggs
- 375ml fine butternut
- 188ml brown sugar
- 3,75ml cinnamon
- 4ml ground ginger
- 2,5ml salt
- pinch nutmeg
- 375ml evaporated milk
Preheat oven to 180°C. Whisk eggs, sugar and evaporated milk together. Add the rest of the ingredients and bake until set. Decorate with slightly sweetened cream and a sprinkle of cinnamon.
